The following evening, Chef Jean-Georges served a personally-crafted dinner with tailored wine pairings at SEARED, providing the freshest seafood and finest cuts of steak, as well as fresh sushi and ceviches at SUVICHE.

Agua by Larbi, one of the resort’s most enviable seaside restaurants, served a Mexican a la carte menu with tequila pairing to celebrate Cinco de Mayo, while wine-lovers enjoyed a “Meet the Wine Maker” experience with California cult winery Sine Qua Non.

“We are thrilled to be welcoming Chef Jean-Georges to One&Only Palmilla to curate an exceptional culinary-inspired Cinco de Mayo fiesta,” said Robert Logan, General Manager, One&Only Palmilla. “We are embracing the best of Mexico with the finest local ingredients and gourmet experiences to offer our guests a celebratory weekend to remember.”

After exceptional dining experiences, guests could also indulge in bespoke wellness experiences including the newly-introduced Temazcal, and a wide array of water activities and surfing at one of the few swimmable beaches in Los Cabos.

Las Ventanas Al Paraíso, A Rosewood Resort Unveils Arbol, The First Asian Restaurant In Los Cabos

The Five Diamond Resort’s Newest Dining Destination
Makes a Splash in the Los Cabos Culinary Scene

Las Ventanas al Paraiso, A Rosewood Resort has just opened Arbol, the resort’s third formal dining establishment and the first Asian restaurant in Los Cabos. Set near the Five Diamond Resort’s new Signature Residences, the restaurant offers guests a magical atmosphere, complete with hundreds of twinkling lights, live lounge music from a resident DJ, one-of-a-kind artworks and an inspired menu of fresh seafood dishes prepared using the wok and tandoor.

“For over 20 years, Las Ventanas al Paraiso has prided itself in offering stellar culinary experiences, from our authentically Mexican El Restaurante to our open-air Sea Grill perched on the water’s edge to our vibrant Tequila & Ceviche Bar, featuring the most expansive collection of tequilas in Mexico,” said Frederic Vidal, managing director of Las Ventanas al Paraiso. “Arbol is a wonderful addition to our collection of culinary offerings, providing guests and Cabo foodies alike with innovative cuisine in a spectacular setting.”

Arbol, which translates to “tree” in Spanish, is led by Chef Anand Singh, who joins Arbol after serving as head chef at Diamond Resort in the Maldives for over four years. Chef Anand’s menus showcase fresh seafood straight from the waters around Baja California Sur cooked with vibrant Asian flavors that he learned from his extensive experience cooking in India, the Maldives, UAE and Seychelles.

The menu includes a Raw Bar, featuring fresh oysters from Baja and platters of shellfish that are ideal for sharing with a group. Diners can also select from a variety of temari sushi and sashimi, as well as fresh salads and soups. Entrees at Arbol are prepared with Asian cooking techniques, such as Chicken Tikka and Tandoori Lobster with Mango Chutney cooked in a tandoor oven from Delhi and Stir-Fry Wagyu Beef and Seafood Bami Goreng cooked in a wok from Hong Kong. One of Chef Anand’s specialties is his Octopus Curry, which is inspired by the Seychelles where he worked for several years.

Chef Anand’s dishes are served in a captivating space inspired by the restaurant’s name. Guests enter through a separate entrance adorned with sculptural trees by Guadalajara-based artist David Luna and over 500 sparkling birdcage lights. The space is filled with seven of Luna’s trees, creating an intimate forest setting, made even more enchanting by an eclectic soundtrack from a resident DJ and the soothing sounds of the Sea of Cortez in the background.

Discover Careyes: A Luxurious yet Unspoiled Eco-Paradise

Combining the sensuality of the Mediterranean with the unique architecture and hospitality of Mexico, Careyes is a superbly exclusive private beach resort.

Located on the Costalegre or “happy coast,” this family-owned resort is impeccably situated on the Mexican Pacific beaches of the south coast of Jalisco, Mexico.

Combining a sustainable mix of rugged luxury, artistic design, and unexpected adventures, Careyes’ specific combination of natural beauty, architecture and sybaritic lifestyle make it one of the world’s most coveted destinations among the cognoscenti.

Gorgeous villas with large infinity pools offer dramatic ocean views, complete with grand palm-thatched palapas, and indoor-outdoor spaces that naturally merge with the land.

Careyes, spanning over 20,000 acres including the reserve, features a creative international community with vibrantly colored accommodations designed by the world’s most imaginative architects, as well as spacious casitas, the new El Careyes Club & Residences, five al fresco restaurants, and Careyes Polo Club, with two regulation-sized Bermuda grass fields.

Exclusive events are held throughout the year at Careyes, including the Arte Careyes Film Festival, Ondalinda music festival celebrating Mexican heritage, a number of polo events, Chinese New Year celebration, and more.

Ranging from hikes through the jungle mountain terrain and long walks on unspoiled beaches, to endless swimming, boating excursions, yoga classes, whale-watching in season, scuba diving, surfing, tennis, kayaking, horseback riding, and polo at the Careyes Polo Club–there are plenty of outdoor activities in Careyes.

Meals are served at five restaurants featuring international and Mexican cuisine, honoring local flavors and incorporating regionally-sourced ingredients.

Sitting at the center of the Chamela Cuixmala Biosphere Reserve, Careyes has contributed a large expanse of wetlands for preservation in 1994. This protected area hosts 70 species of mammals, 270 species of birds, and over 1200 species of flora and fauna. Being “green” and sustainable is a way of life that has been incorporated since the very beginning 40 years ago.

The villas are built to maximize cross ventilation to lessen the use of air conditioning. Outdoor lighting is limited at night to conserve energy and avoid the light pollution that detracts from the stars. All development in the private resort estate is ecologically sensitive, making it a leading example of sustainable growth, responsible consumption, and natural preservation for its neighbors.

This dedication to preservation extends to all aspects of Costa Careyes and spurred the creation of the Careyes Foundation. The Careyes Foundation was created years ago to support environmental programs and the local community. Fascinating, elegant, educated and multilingual, the Careyes community is equally as important, beautiful and colorful as the place itself.

Sea turtle preservation, educational programming, agricultural initiatives, and an Artist in Residency program are among the many ways the Careyes Foundation protects the unique way of life in this region. The turtle conservation program has helped more than 1.4 million turtles to date.

The natural seclusion, perennially perfect climate and myriad of outdoor activities and inspired magic of Careyes has attracted the world’s jetsetting bon vivants since its earliest days. Today, Careyes remains one of the world’s most coveted destinations, with an unparalleled list of VIP visitors and residents of more than 42 nationalities who come to celebrate the amazing setting and quality of life all year-long.

Sir Ben Ainslie – A Man on a Mission

Sir Ben Ainslie’s mission is to bring the America’s Cup home to Britain.

He is one of the greatest living sailors alive today. He is the most successful Olympic sailor in the world. He won a silver medal at his first Olympic Games, and went on to establish himself as the world’s best by winning four consecutive gold medals.

Ainslie’s ground-breaking techniques have been adopted by others in his fleet and many of his contemporaries. His 2013 victory aboard the Oracle Team USA in the 34th America’s Cup is considered one of the biggest comebacks in sporting history.

The America’s Cup is awarded to the winner of the America’s Cup match race between two sailing yachts. Interestingly, the timing of each match is currently held sporadically with the date, venue and vessel determined by the previous winner.

Sir Ben Ainslie is the Land Rover BAR’s Team Principal & Skipper, and he developed and leads a British sailing team. He hopes to bring the trophy home for the first time in over 160 years at the 36th America’s Cup scheduled for 2021.

As part of their training, in early December of 2017, Sir Ben Ainslie and his team were spotted at the Act 8, the 2017 grand finale, and first-ever Mexican edition of The Extreme Sailing Series™, presented by SAP, which took place in Los Cabos.

“I couldn’t be prouder of the team. It has been an amazing journey for us.” “What we’ve achieved now is phenomenal …we are a very proud British team and we will be back in the America’s Cup.” – Sir Ben Ainslie
