GOURMET
Slices of Life
Esteemed baker Dan Lepard says baking bread, where a variety of ingredients marry to become a sublimely coherent food, is much like when members of an orchestra come together to produce
a single melody.
Bread has become therapeutic for many, transforming the mundane — flour, water, yeast and salt — into something altogether greater than the sum of its parts.
Bread is a cultural anchor that we often take for granted, and baking bread at home has seen a huge rise in popularity as people discover the pleasure that comes from kneading dough, punching it down after the first rise, and delighting in the soothing odor as loaves bake.
Making bread means being entirely in the moment, free of distractions, and some find the ritual empowering. With so much of our lives led in the virtual world, the tangible process of baking brings a fundamental satisfaction.
“Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts.” — James Beard
