at age 15 in Houston’s restaurant Underbelly. She met Chef Enrique
and transforming Olvera and visited his Mexico City restaurant, Pujol, where Olvera
Mexican cuisine recognized her talent and, when she was only 23, chose her as chef de
cuisine to open his restaurant, Cosme in New York City.

Soto-Innes describes her style as from “another state of Mexico.”
She incorporates local ingredients and recipes with her Mexican
palate. Her long-standing signature dessert is cornhusk meringue,
Daniela Soto-Innes, Enrique Olvera inspired by a childhood memory. Her intriguing combinations
include fluke tostadas, sweetcorn tlayudas, duck carnitas, crab
infladita, and other delights.
Cosme’s 2019 best female chef in the world, and mentor and
partner Chef Olvera, opened Soho’s Alta in 2017 and are
continuing their culinary journey in Los Angeles, with Ditroit,
a vegetarian taqueria, and Damian, described as Japanese-
influenced Mexican cuisine.
