Nobuyuki Matsuhisa, the chef and founder of the Nobu restaurant chain, was born in Saitama, Japan. Matsuhisa became interested in cooking after watching his grandmother and learned the basics of sushi making as a kitchen assistant at a restaurant when he was 12. Matsuhisa is known for his Japanese-Peruvian fusion cuisine, which blends traditional Japanese dishes with Peruvian ingredients. His signature dish is black cod in miso. The acclaimed chef has restaurants in several countries, including celebrity hotspots like Dallas and Dubai. The chain has 47 locations across five continents. Matsuhisa has also appeared in movies, including Casino(1995), Austin Powers Gold Member(2002), and Memoirs of a Geisha(2005). He co-founded the Nobu restaurant chain with actor Robert De Niro.
